Easy Recipe for French Onion Soup

This simple recipe for French Onion soup makes a perfect light dinner or quick appetizer for two.

Ingredients

  • 2 teaspoons butter
  • 2 cups thinly sliced onions
  • 1 teaspoon flour
  • 3 cups beef broth (canned is fine)
  • 4 slices French Bread (lightly toasted)
  • 1/2 cup shredded Swiss Cheese
  • 1/2 cup shredded Parmesan Cheese
  • Freshly ground pepper

Directions

Melt butter in medium sized pan. Lightly brown onions. Add flour and stir continuously. Add broth and bring to a boiling point. Lower heat and cook slowly for about 20 minutes. Preheat broiler. Divide soup and add to oven proof bowls. Season with freshly ground pepper as desired. Top each bowl with bread and sprinkle lightly with shredded cheeses. Brown carefully for a few minutes under the broiler.
